Cowboy Beans Recipe
- 1/4 pound bacon
- 1/2 pound ground beef or pork
- 1 medium onion, chopped
- 1 carrot, chopped
- 1 tablespoon Sunny Oaxaca Seasoning
- 4 cans beans, mix of navy, pinto, kidney, or other
- 2/3 cup tomato sauce or puree
- 1/2 cup molasses
- 1/4 cup cider vinegar
Preheat oven to 325. Rinse and drain the beans. Fry, drain, cool and crumble the bacon. Brown the ground meat; add onion and carrot and cook until onion is translucent and meat is done, about 10 minutes. Stir in Sunny Oaxaca Seasoning, beans, tomato sauce, molasses, and vinegar. Pour into 3-quart casserole dish and bake, covered, 1 1/2 hours. Even better the next day; add water or more tomato sauce before reheating.
