Horseradish Cheese Spread Notes

During our family visits to my parents' Door County home, we discovered a horseradish cheese spread that wasn't available in the Chicago area. It was delicious spread on crackers. Although the spread has recently become available locally, last year, in preparation for our daughter's wedding, my husband and I lost a total of 145 pounds. In an effort to enjoy our favorite cheese spread, while maintaining our healthy weights, I put together this recipe using low fat and non fat cheeses. My family says it tastes better than the original!

Ingredients

  • 2 tablespoons horseradish powder
  • 2 tablespoons water
  • 3/4 cup 1% fat cottage cheese
  • 3/4 cup shredded reduced fat sharp cheddar chesese
  • 8 ounces non-fat cream cheese, room temperature
  • red and yellow food coloring (optional)

Serves / Yields

2 cups (approximately)

Preparation Instructions

Mix horseradish powder and water together in small bowl. Set aside. Place cottage cheese and shredded cheddar cheese in the bowl of a food processor with knife blade inserted. Process until cheeses are smooth. Add cubes of cream cheese and horseradish powder mixture and process until smooth. If desired, add 8 drops yellow food coloring and 4 drops red food coloring. Process until colors are even. Serve with crackers.

Helpful Hints

While this recipe tastes great just after it's made, the flavors develop after it sits in the refrigerator up to a day.
