Lasagna Soup Notes
I had lasagna soup at a local restaurant and had to come home and recreate it. I looked at different recipes online but didn't think any of them matched the taste that I had enjoyed. So I created my own! After a couple of failed attempts, this is a new family favorite! It tastes like lasagna without all the effort!
Ingredients
- 1 pound ground beef, lean
- 1/4 teaspoon garlic powder
- 1/2 teaspoon granulated white onion
- 1/2 teaspoon Italian seasoning
- 1 can diced tomatoes
- 1 can tomato paste
- 7 cups beef broth
- 8 lasagna noodles, broken into random-sized pieces
- 3/4 cup shredded parmesan cheese

Preparation Instructions
Brown beef, garlic power, white onion & Italian seasoning in a large 4 quart pot until browned. Add diced tomatoes and half the broth. Add tomato paste until mixed. Heat to a boil. Stir in pasta and then remaining broth. Heat to boil. Add 1/2 cup of cheese. Cook over medium low heat 10 minutes, or until pasta is done. Stir in remaining cheese. Salt to taste, but there’s usually enough salt in the beef broth and cheese.
