Pecan Pie Notes

This is my dad's favorite pie. I actually made this and shipped it via UPS for Father's Day one year. With extra special packing care, it arrived all in one piece! This recipe is so simple, you won't believe how delicious it turns out.

Ingredients

  • 1 cup sugar
  • 3 large eggs
  • 1/2 cup light corn syrup
  • 3 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1 3/4 cups pecans, chopped
  • 2 deep dish frozen pie crusts

Preparation Instructions

Preheat the oven to 350 degrees. Whisk the first 5 ingredients in a medium bowl to blend. Mix in 3/4 cup pecans. Pour into the pie crust. Sprink with the remaining 1 cup of pecans. Bake pie until set, about 1 hour. Transfer to a rack to cool. Serve warm or at room temperature.

Helpful Hints

You can make your own pie crust, or use 2 frozen deep dish crusts available in the frozen section of most grocery stores. Simply thaw the crusts, carefully roll them into one ball and reroll it into one thick crust. Use flour on your work surface and try not to overwork it, or it'll get tough. Once it is rolled and set in your pie plate, stick it in the freezer until you are ready to fill and bake.
