Potato and Mushrooms Tortillas Recipe

- 1 tablespoon olive oil oil
- 2 cup chopped onion
- 3 cups shredded potato
- 4 tablespoons fajita seasoning
- 8 ounces sliced button mushrooms
- 1 package Essence de Champignon Gold Classic Mushroom Essence
- 2 cups refried beans
- 2 cups crushed tomatoes
- juice of 1 lime
- 8 tortillas
Serves / Yields
Heat a large sauté pan with the oil until hot. Add onions, potatoes and 2 T Fajita Seasoning and brown, about 5-8 minutes. Add mushrooms and other 2 T Fajita Seasoning and continue to brown, about another 5 minutes. Add beans, tomatoes and Mushroom Essence (or 1 C mushrooms stock) and let cook until liquid is almost gone (about 20 minutes). Spoon into tortillas and serve with salsa and sour cream if desired. Also good on rice. Yield: 8 tortillas
