Chia seeds are high in Omega 3's, 6's and protein. The seeds take on any liquid and the texture becomes like tapioca pudding. This recipe is very easy and it can be customized to a persons taste. It is a healthier and lighter version of traditional puddings.
Place on ingredients in a bowl and stir till blended well. Cover and refrigerate till serving time (Give it at least an hour to set).Before serving, taste and adjust level of sweetness. Serve cold or at room temperature as is or with a dollop of whip cream.
Create a chocolate version by omitting cardamom and adding 1 Tbsp cocoa powder. Add a pinch of chili powder if you wish for a spicy chocolate treat. Top with toasted coconut, nuts or whip cream that has been infused with different flavors (vanilla, fruit etc..)
