Chipotle Vinegar and Sea Salt Roasted Potatoes Notes
This is my own recipe.
Ingredients
- 4 large baking potatoes, scrubbed and cut into pieces
- 1/2 cup white vinegar
- 1/4 cup vegetable oil
- 1 tablespoon chipotle powder
- 2 tablespoons coarse sea salt
- 1 teaspoon extra coarse ground black pepper
Serves / Yields
6 Cups
Preparation Instructions
Mix the vinegar and chipotle powder and let sit for an hour. Preheat oven to 350 degrees.
Toss all ingredients together until potatoes are evenly coated. Transfer to a large baking dish and bake, uncovered, for 1 - 1 1/2 hours, or until potatoes are cooked through.
