Strawberry Vanilla Cookies Notes
This recipe was created by Spice House staffer Desi Phillips to showcase our new Strawberry-Vanilla Sugar for Evanston's Retail Therapy Night.
Ingredients
- 14 tablespoons unsalted butter, softened
- 1 1/4 cup white sugar
- 1/2 cup Strawberry-Vanilla Sugar
- 1/4 teaspoon citric acid
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 3/4 cups flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- Additional Strawberry-Vanilla Sugar for rolling and sprinkling
Preparation Instructions
Cream together the butter, sugars and citric acid. Add eggs one at a time, then vanilla and almond extracts. Blend until smooth. In a separate bowl, sift together flour, baking soda, and salt. Blend flour mixture into butter mixture and chill for 30 minutes.
Preheat oven to 345. Shape dough into balls of about 1 tablespoon and roll balls in Strawberry-Vanilla sugar. Place at least 2" apart on a lined or greased cookie sheet (cookies will spread extensively). Bake for 12 minutes or until edges are just starting to brown - cookies should still look soft in the center.
Place cookies on a rack and immediately sprinkle with additional Strawberry-Vanilla Sugar.
Helpful Hints
These cookies will be quite thin, so if you like a chewy cookie take them out of the oven sooner, and if you like a crispy cookie leave them in longer.
