Zucchini Bread Notes
I freeze two cups of shredded zucchini at the end of the season so my family can enjoy this bread all winter!
Ingredients
- 1 cup oil
- 2 cups sugar
- 3 eggs
- 2 cups shredded zucchini
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons vanilla extract
- 1 teaspoon Apple Pie Spice
- 2 teaspoons cassia cinnamon
- 3 cups white whole wheat flour
- 1/2 cup golden raisins or dried cherries

Preparation Instructions
Beat the oil and sugar in your mixer thoroughly. Add one egg at a time as you continue to beat the mixture. Add the zucchini and vanilla. Mix the dry ingredients in a bowl. Beat in the dry ingredients at a lower speed. Stir in the raisins or cherries. Place in two loaf pans that have been sprayed with nonstick spray. Bake at 325 degrees for 60-70 minutes.
Helpful Hints
I use canola oil and white whole wheat flour to make this healthy. Vegetable oil and white flour can also be used. Spices from the Spice House really have made this a family favorite!
