Mint is frequently used in Greek, Turkish, and Middle Eastern cooking. It blends well with fruit, meats, and other herbs, and is a common ingredient in yogurt sauces. In Western cooking, mint is mostly paired only with lamb, or used for tea.
The Spice House carries both Peppermint and Spearmint in dried form. Peppermint is typically used in baking, candymaking and tea. Spearmint is traditionally used in savory cooking. If your recipe calls for mint without specifying a type, spearmint is probably what you need.
I'll bet what motivated the British to colonize so much of the world is that they were just looking for a decent meal.
