Black Tellicherry pepper is ground fresh here at The Spice House weekly. This is the freshest, most robust, ground pepper you can buy.
We grind only the finest Tellicherry pepper, frequently and in small quantities to guarantee you that you will not find a better, fresher pepper than ours here at The Spice House. We also go one step further by offering you seven different mesh sizes, from very coarse to very fine, to appeal to individual tastes and cooking needs. All of the following grind sizes are referred to as "dustless" which means that the finer particle size nuaturally occurs in the grinding of pepper has been sifted out for an attractive, more uniform appearance and particle size.
Large cracked dustless: 6/10 mesh; ideal for large cuts of meat which roast slowly, allowing the savory flavors of the both the meat and the pepper to develop.
Medium cracked dustless: 10/16 mesh, dustless; the size of choice for steak au poivre.
Extra coarse dustless grind: 16/20 mesh. The size most chefs use for creamy peppercorn dressing.
Coarse dustless grind: 20/30 mesh, many of our customers prefer this pepper to the shaker grind; the slightly larger-sized grind seems to have a little stronger flavor, yet it will still fit through a standard pepper shaker hole.
Dustless grind: 30/60 mesh; our most popular ground pepper. Our best ground pepper for all daily cooking applications.
Extra Fine grind pepper (dust): -60 mesh; this is the powder that's left when the Dustless grinds are siften out. It's a flour-like texture that blends well into sauces.
