These Japanese mushrooms grow wild on the Shii tree. Although Asian cuisine values mushrooms more for their perceived healing attributes, these mushrooms have a delightful strong, smoky flavor that can be paired with richer and more spicy foods than most mushrooms. Due to their dense texture, they also rehydrate well enough to substitute for fresh.
I never drink water. I'm afraid it will become habit-forming.
