When a local butcher asked about spices for making Merguez lamb sausages, we got excited. Merguez is a North African lamb sausage, seasoned heavily with cumin, garlic, and dried chiles. After weeks of recipe research and test kitchen experiments, we captured the traditional Berber recipe’s flavor in a balanced blend of spices. We soon realized our Merguez Seasoning was too good for sausage alone.
