English Style Pot Roast
My beautiful and talented fiancee Carrie came up with this while sampling the English Prime Rib Rub. It's actually better than my mom's and easy as pie to make (though good pie is actually quite difficult.) Try it, you'll love it.

Yield: 6-8 servings

Ingredients

  • 3 pound English roast or chuck roast
  • 1 package dried onion soup mix
  • 3 large carrots large dice
  • 1 large yellow onion, large dice
  • 3-4 celery ribs, large dice
  • 5-6 small potatoes, halved

Preparation Instructions:

Season the roast liberally with English Prime Rib Rib.

Sear on both sides, place in slow cooker/crock pot.

Make onion soup mix according to package instructions, use to deglaze pan that you seared roast in. Pour everything into a crock pot along with the seared roast.

Add carrots, celery, potatoes and onions to pot.

Slow cook for 6+ hours.

Meat will fall apart on its own, saves you from having to set out knives or cleaning them.

More About This Recipe

The more onions the better, in my opinion. You can also add a splash of malt vinegar or red wine to the pot. A few bay leaves or sprigs of fresh time are an excellent addition to the simmering pot as well.
