In older Spice Trade definitions, when a pepper was unusually hot, it was given the name "cayenne" whether or not it actually was grown in the Cayenne region of South America. It is also known as “hot red pepper” or just “red pepper,” and is often used not just for the heat but for its ability to subtly enhance other flavors. This pepper will add a nice zip to any dish.!
