This Cantharellus cibarius variety is known as the "true" chanterelle. Chanterelles fruit in the fall, and their distinct, tapering ribbed cap and golden color makes them easy for mushroom hunters to find. Called egg mushrooms or golden chanterelles, fresh chanterelles have a recognizable flavor profile of apricot with notes of pepper. Chanterelles in their dried form lose some flavor, but using the liquid used to reconstitute them helps get maximum flavor.
