Tamarind Concentrate

Tamarind comes from the Arabic for "Indian date," and was originally grown in tropical Africa. Today, tamarind is found in kitchens throughout the Caribbean, Latin America and Oceania, making it a truly global fruit. Its sweet and sour notes make for a refreshing agua de tamarindo, tart chigali lollipop and savory umami of Worcestershire Sauce.

Tamarind finds its way into dishes all around the world from a souring agent commonly used in Indian curries and chutneys. Thai stir-fry uses tamarind enthusiastically. In the West Indies, where tamarind also grows, it is used frequently in fruit drinks. Here in the US, tamarind makes a great secret barbeque sauce and marinade ingredient.
