Asafoetida Powder

Also known as Hing, asafoetida is a staple of Northern Indian vegetarian cooking. It has a unique smell and flavor—unpleasantly strong while raw but mellow and allium-like when sauteed in ghee. When paired with turmeric, asafoetida powder lends a leek-like flavor to dhal and potato or cauliflower dishes.

Details

Asafoetida powder is called for often in Indian cooking, primarily in dishes with legumes and vegetables like cauliflower. While on its own the smell may strike you as overpowering, it mellows out during cooking and produces a flavor similar to onion and garlic. In India this hing spice is crucial for the Jains, who do not eat root crops. Contains asafoetida microfine powder, gum Arabic and wheat and rice flour.
