Ceylon cinnamon, or true cinnamon, is botanically different from cassia cinnamon. Ceylon has a more subtle flavor than its cassia cousins due to its lower volatile oil content. The people of Europe and Mexico prefer this cinnamon, which is often used for poaching spiced stone fruits, in pickling recipes, and for brewing hot cocoa. Ceylon cinnamon’s light and understated flavor makes it perfect for dishes that don’t have other flavors competing for the foreground.
