This Malandel Fleur de Sel is harvested by a Paludier who says it is "made of the finest salt crystals floating at the surface of the marsh, and has been traditionally hand-harvested for centuries. This delicacy is produced in very small quantities every year".
This salt is often thought of as the "caviar of salt". These flavorful grains have been hand-harvested in France for many centuries. Only the very top, premium layer of salt is raked from the salt bed when it is harvested. This salt blooms as it dries and develops an aroma of violets.
Unlike industrial processed salt, this Fleur de Sel salt is a natural source of calcium, potassium, magnesium, zinc, copper, and iodine. In addition to its wonderful intrinsic flavor, this salt also draws out the full flavors of other ingredients in any dish it’s added to.
