Our local chili expert, Rick Bayless, describes guajillos as “workhorse chiles with a lot of dazzle." Whole chilies are generally toasted and pureed into a thin paste, which has a dynamic fruity flavor, redolent of cranberry, tomato, and a hint of smokiness. Their moderate heat level, 3-4 on a scale of 1 - 10, makes them a good choice for family-friendly cooking. Guajillo is a great flavor for meat rubs, chili, tortilla soup, and homemade salsa.
Please note: because the whole chilies are dried in the field, you do need to wash them well before using them.
