With a light, herbal, citrusy flavor, lemongrass is an essential ingredient in Southeast Asian cooking. Dried lemongrass is milder than fresh, but it’s shelf-stable and works as a good replacement in recipes when fresh lemongrass is not available.

Lemongrass is used to flavor broths, sauces, and curry pastes in Southeast Asia, especially in Thai cuisine. The effervescent flavor compliments stronger herbal flavors, pungent fish sauces, and fiery Thai chilies. Fresh lemongrass is generally preferable, but when it can’t be found in local markets, this dried lemongrass keeps quite a nice flavor. Use ½ as much dried as fresh.
