We use our sweetest cracked cassia bark, lots of sweet cloves and allspice berries, and some hand-broken star anise, to add a warm sweetness to the mix. Pepper, mustard seeds, dill seeds, and juniper add a savory tang. Use 2 teaspoons per quart jar for pickles. While great for cucumbers, this spice blend can be used for other vegetables, such as onions, beets, green beans, or even pickled eggs. Whenever we parboil ribs, we throw 3-4 tablespoons whole mixed pickling spice into the water.
