I first had ginger toast in a tea shop, and loved it so much I had to learn to make it. The crystallized ginger slices from the Spice House make the best ginger toast, because they have enough moisture in them to stand up to broiling in the oven without getting hard and desiccated. I finely dice them, put them on buttered bread, sprinkle sugar over them, and broil them until the sugar is bubbling. SO worth the little bit of effort!!
