
Root Beer Float Cookies & Meringue Frosting
Root beer extract imparts its signature flavor to homemade cakes, sugar cookies, and frosting. Try it the next time you make ice cream. One teaspoon is sufficient for your typical cake or cookie recipe, and can even be substituted for vanilla extract for a change of flavors. To make a very simple homemade root beer soda: in a stove pot, combine 2 cups water, 1 cups sugar, and 2 teaspoons root beer extract. Reduce the liquid to a syrup and let it cool. Stir the syrup into chilled seltzer water to taste. Ingredient: Ethyl alcohol, water, natural flavor.

I love root beer soda. I wanted to make a root beer flavored cheesecake with this and the Spice House is my go-to for everything flavoring/spices. This was pricey, as many pure extracts are, but I trust the brand. I smelled it upon arrival and was weary that I could smell licorice (or anise?) but was hopeful it would work well. I added 2 tablespoons plus 1 teaspoon to my cake (the same quantity that I add of coffee extract to a coffee flavored cake) as well as 1 teaspoon of vanilla. End result is I will not use this extract again. I did not like the flavor of the cake, to me it doesn't taste like root beer at all. The licorice flavor is too overpowering (I don't like licorice.) I'm disappointed about this but not everything can be a win I guess.
