The truffle is a tuber of unusual flavor and aroma savored in Italian and French cookery. Truffles have yet to be successfully cultivated so their scarcity commands a high price. Due to their short growing season and high demand, truffles can sell for up to $800 per pound, and Piedmont truffles are especially prized for their exceptional flavors. We also carry a black truffle oil, which is stronger than the white. It’s very nice to add to marinades and vinaigrettes. You can bring out a fuller truffle flavor in your dish by finishing with a drop or two of the oil. The oil pairs very nicely with any dish containing mushrooms, as the flavor of truffles and other mushrooms complement each other, take a look at some of our white truffle oil recipes. White truffle oil will get stronger if added to a dish before cooking, whereas the black truffle oil is strong enough right away to add as you finish a dish.
