The truffle is a tuber of unusual flavor and aroma savored in Italian and French cookery. Truffles have yet to be successfully cultivated so their scarcity commands a high price. Due to their short growing season and high demand, truffles can sell for up to $800 per pound, and Piedmont truffles are especially prized for their exceptional flavors. We also carry a black truffle oil, which is stronger than the white. It’s very nice to add to marinades and vinaigrettes. You can bring out a fuller truffle flavor in your dish by finishing with a drop or two of the oil. The oil pairs very nicely with any dish containing mushrooms, as the flavor of truffles and other mushrooms complement each other. White truffle oil will get stronger if added to a dish before cooking, whereas the black truffle oil is strong enough right away to add as you finish a dish.
