Season steak with Ancho-Coffee Rub and let sit at room temperature 1 hour.
Bring cast iron skillet to medium high heat. Add cooking oil and cook the steaks to desired temperature. When the steak has almost reached your desired temperature, raise the heat so the sugar in the Ancho-Coffee rub caramelizes and forms a crust. Serve steak with a tablespoon of butter on top and salt to taste.
