Add sugar and Apple Pie Spice to bowl and stir.
Bring 1 Qt of water to boil. Add walnuts. When water returns to boil, remove and drain. Add immediately to bowl and toss until sugar is dissolved.
Heat about 4 C of vegetable oil in a large, wide saucepan until registers 375° on a deep fat thermometer (or until piece of walnut sizzles immediately when added to oil). Lay out 2’ piece of aluminum foil. Add the sugared walnuts in batches and let fry until golden brown (about 2-4 minutes). Remove with a slotted spoon and let dry on aluminum foil for 10-20 minutes.
