Cajun Shrimp with Stewed Okra and Tomatoes

I'm a Wisconsin native that moved to Florida in 2014. I stopped at your shop in June to pick up my yearly supply of your wonderful spices to take back down South. I'm also learning to garden 'Southern Style', so okra had to be added to my garden. Having never grown it before or eaten it other than in Chicken Gumbo Soup, I decided to try my luck and created this recipe. I had picked up your Cajun spice,so I was anxious to try it out. The American Shrimping Industry was started on the Island I now live on, Amelia Island, so I knew I needed to add shrimp to this recipe too. Bacon was also a Southern 'must add'.

Cajun Shrimp with Stewed Okra and Tomatoes Recipe

Ingredients
  • 6 slices thick bacon
  • 1 onion, diced
  • 2 cups fresh okra, cut into 1/2 inch cubes
  • 1 ( 28 ounce) can diced tomatoes with Basil, Garlic & Oregano
  • 1 - 2 heaping tablespoons Cajun Seasoning
  • 1 pound fresh shrimp (shelled & deveined)

Preparation Instructions

Over medium heat in a cast iron skillet, add the bacon. Cook until crisp. Remove from pan, break into small pieces, and set aside. Add the onion to the bacon grease and saute until tender, about 3 minutes.

Add the bacon, okra, tomatoes and juice from tomatoes. Season with 'Cajun Seasoning'. Cover allowing dish to gently steam and simmer for 30 - 45 minutes or until okra is tender.
Add the fresh shrimp and simmer another 10 minutes until shrimp is pink.

Serve over rice and enjoy!
