Gluten Free Chocolate Cake

The image is of my daughter and son-in-law's wedding cake. My daughter is a gilder and added edible gold leaf to the cakes and her husband who skates added skate-like patterns on the cakes tops. The icing was buttercream.

Gluten Free Chocolate Cake Recipe

Ingredients
  • 2 cups boiling water
  • 1 cup unsifted cocoa powder
  • 1 1/2 cups white rice flour
  • 1/4 cup sorghum flour
  • 1/4 cup teff flour
  • 1/4 cup tapioca flour
  • 1 tablespoon Arrowroot
  • 1 teaspoon Xanthan Gum
  • 1/2 teaspoon Salt
  • 2 teaspoons baking soda
  • 1/2 teaspoon gluten-free baking powder
  • 4 eggs
  • 2 1/2 cups brown sugar (not compressed)
  • 1 cup butter, room temperature
  • 1 1/2 teaspoon vanilla extract

Preparation Instructions

Mix the water and cocoa and set aside to cool completely.

Mix the dry ingredients and set aside.

Beat eggs slightly in a large bowl.

Add sugar, butter, and vanilla, then mix.

Then add 1/4 of the flour mixture and 1/3 of the cocoa mixture and repeat with the remainders.

Beat in a mixer for 5 minutes.

Preheat oven to 350

Butter and wax paper line three 8" circular cake pans, and pour in batter.

Bake for 25 minutes or till a toothpick comes out nearly dry.

Cool for 15 minutes.

Turn over onto a plate, and frost as desired when the cakes are cooled.
