Toss carrots in oil and spices until completely covered.
Grill over medium-high heat coals, turning them every so often, until sufficiently tender to your liking.
Grill lemon over low heat while carrots cook, sear at end for presentation of grill marks.
Plate with toppings of cheese and mint. Squeeze lemon juice over carrots to your liking.
