I used the recipe for a small boneless ham. The kids were crazy about it even though it was a little spicy with the Dijon mustard.
Because I didn't have the type of ham called for in the recipe, I modified it a bit. I seared it so the topping wouldn't melt off, and then poured a half cup of water into the pan and covered it for the duration of the cooking time. Once it was done, I broiled it for 5 minutes to crisp up the crust. Perfect! Juicy, tender ham with a nice carmelized crust.
Next time, I will do honey mustard or only half Dijon, so it isn't too spicy for the little ones.
