Major Jack Poblano Recipe

  • 12 Poblano Peppers – Diced
  • 1 Large Onion – Diced
  • 4 Garlic Cloves – Diced
  • 3 pounds Chicken Chorizo
  • 4 ounces butter
  • 1 cup flour
  • 1/2 gallon whole milk
  • 1/4 cup chicken Redi-Base or condensed chicken stock
  • 2 tablespoons Green New Mexican Chile Powder
  • 1 teaspoon ground cumin
  • 1 pound Monterey Jack Cheese – Shredded
  • 1 pint cream
  • 2 15oz cans white beans

Preparation Instructions

Add poblano, onion and garlic to large oiled frying pan and sauté on high heat. Set aside when done.
Fry chicken chorizo, drain grease and set aside.
Melt butter in large soup kettle and mix in flour.
Slowly add about half the milk stirring constantly with a whisk. Add the Redi-Base, Green New Mexican Chile Powder and cumin. Continue stirring and bring to slow boil to thicken. Remove from heat. Continue stirring and add Monterey Jack Cheese. When melted, stir in remaining milk, cream, white beans and previously cooked ingredients.
