Maple Bacon Sundae Topping

There was a Column in the Milwaukee Journal-Sentinel called "By Request". They were asking for desserts using bacon. I submitted mine and they printed it. This was devised from my love of maple flavored bacon and butter pecan ice cream. Yummy. Even eaten by itself.



1 Cup


Dice bacon into very small pieces and fry in a large non-stick saute pan until crispy.
Drain on paper towels and leave bacon drippings in pan.
In a seperate bowl, combine spice, sugar and salt.
In same pan, heat drippings and butter until hot.
Stir in nuts and cook, stirring 1 minute.
Stir in spice mixture and cook an additional minute.
Add maple syrup and bacon and stir until they are well coated. Remove from heat and sprinkle the vanilla powder over it.
Allow topping to cool in pan slightly.
Remove to a cookie sheet covered with parchment paper or buttered foil.
Crumble when cool.


Store in the refrigerator (if there is any left).
Serve over ice cream, or even stir into vanilla pudding.
Butter Pecan Custard is my favorite.
A little chocolate syrup wouldn't hurt either.
