Momma Larimer's Mandarin Orange Muffins Recipe

  • 5 1/2 cups of flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1.5 cups of dark brown sugar
  • 1.5 cups of white sugar
  • 2 cans of mandarin oranges, chopped (reserve 1/4 cup of the liquid)
  • 1.5 cups unsalted butter
  • 1.5 cups whole milk
  • juice of 1/2 lemon
  • 2 tablespoons vanilla paste
  • 1.5 teaspoons lemon extract
  • 1.5 teaspoons orange extract
  • 4 large eggs
  • 1.5 cups yellow raisins (I've used craisins and currants at times)
  • 1-2 tablespoons, enough to sprinkle on tops before baking, maple sugar

Preparation Instructions

1. Mix dry ingredients;
2. Mix wet ingredients and add to dry, and fold in with a spatula;
3. Fold in cut mandarin oranges and dried fruit (yellow raisins);
4. Use Pam cooking spray;
5. Pour into 12 large muffin pans;
6. Sprinkle with either vanilla sugar or maple sugar;
7. Bake at 375 degrees for 20-25 minutes.

Helpful Hints

If you notice your muffins browning too fast on top put a piece of tin foil over them while they continue to bake to keep the tops from over-browning.
