Orange Shortbread with Dark Chocolate Recipe

Pre-heat oven to 350 degrees. With a hand-held mixer, beat together the butter and and sugar. Add extract. Blend in flour thoroughly. Pat into an 8x8 square pan. Press in chocolate. Bake 30-35 minutes, until slightly firm to touch. Cut into squares while still warm. Remove from baking pan and cool on a rack.

Would make again but next time would add a tablespoon finely grated orange zest to the flour. I suggest lining the pan with foil and leaving an overhang on two opposite sides for easy removal.
