Potato and Mushrooms Tortillas Recipe

Preparation Instructions

Heat a large sauté pan with the oil until hot. Add onions, potatoes and 2 T Fajita Seasoning and brown, about 5-8 minutes. Add mushrooms and other 2 T Fajita Seasoning and continue to brown, about another 5 minutes.
Add beans, tomatoes and Mushroom Essence (or 1 C mushrooms stock) and let cook until liquid is almost gone (about 20 minutes).
Spoon into tortillas and serve with salsa and sour cream if desired. Also good on rice.
