Quattro Chocolate Delight

Cookies are also delicious with Strawberry or Hibiscus icing.



In a large bowl mix butter and both sugars until smooth and creamy.
Add egg and chocolate extract.
In a separate bowl whisk the flour, cocoa powder, baking soda, and salt until combined.
Add butter, sugar & egg mix to flour mix.
Add cacao nibs and chocolate chips to mix.
Add 2 tablespoons of milk to mix to bring cookie dough into a good mixture.
Refrigerate dough.
Preheat oven to 350 F.
Line baking sheets with parchment paper.
Roll dough into balls about 2 tablespoons each.
Place on baking sheets about 2" apart.
Press down gently.
Bake cookies for 10 minutes.
Be sure to rotate the pan during bake time.
The baked cookies will look soft in the center when you remove them from the oven.
Allow the cookies to cool on the baking sheet before transferring them to a wire rack to cool completely.
