Reverse-Seared Garlic Maple Pork Chops Recipe

Preparation Instructions

Marinate pork chops overnight in soy sauce or Teriyaki.

Preheat oven to 225 degrees. Remove pork chops from marinade, let excess liquid drip off. Coat pork chops with Gateway to the North Seasoning, set meat on a raised baking rack and bake until the internal temperature reaches 140-145 degrees.

Remove from oven, let meat rest 5-10 minutes before searing the pork chops in a hot cast iron pan. The sugar will caramelize and form a nice crust. Slice and serve.

Helpful Hints

This is a simpler and more accessible technique than cooking with the increasingly popular sous vide technique. Sous vide is a similar approach where food is first vacuum sealed and cooked in a temperature-controlled water bath before a high-heat finish. Both of these methods are renowned for getting a juicy meat and perfect texture inside and out.
