Marinate pork chops overnight in soy sauce or Teriyaki.
Preheat oven to 225 degrees. Remove pork chops from marinade, let excess liquid drip off. Coat pork chops with Gateway to the North Seasoning, set meat on a raised baking rack and bake until the internal temperature reaches 140-145 degrees.
Remove from oven, let meat rest 5-10 minutes before searing the pork chops in a hot cast iron pan. The sugar will caramelize and form a nice crust. Slice and serve.
