Place rice, water, butter, salt and saffron in a large, heavy saucepan. Bring to boil. Stir, reduce heat to simmer, cover pan and cook until rice is tender and liquid is absorbed, about 15 minutes.

I bring 2 cups chicken broth to boil, add crumbled saffron - set aside. In 2 tablespoons butter, saute one small minced onion until translucent, add 3-4 minced portabella mushrooms and 2 cloves minced garlic - saute until mushrooms are soft. Mix all together, bring to boil, reduce heat & simmer for 15-18 minutes until broth is absorbed & rice is tender.
