Scrambled Egg Muffins Recipe

  • 8 eggs, beaten
  • 1 cup Half & Half
  • 1 medium onion, finely diced
  • 1/2 cup Parmesan cheese
  • 3 Yukon golden potatoes, diced
  • 3/4 cup Romanian Kosher beef salami, diced
  • 1/4 teaspoon Hungarian Sweet Paprika
  • 1/4 teaspoon ground pepper
  • 1/2 cup Scallions, diced
  • 4 tablespoons vegetable oil
  • 1/4 teaspoon fleur de sel french sea salt

Preparation Instructions

Preheat oven to 350.
In a pan, on medium high sauté for 7 to 10 minutes oil, onion, potatoes and salami. Remove from heat. In a large bowl add eggs, half & half, scallions, paprika, salt, pepper, Parmesan cheese, and hash mixture. Using a ladle, pour mixture to a nonstick muffin tin. Bake for 30 to 35 minutes.
