Love surprising my family on the weekend with scrambled egg muffins! Easy and incredibly delicious.
Preheat oven to 350.
In a pan, on medium high sauté for 7 to 10 minutes oil, onion, potatoes and salami. Remove from heat. In a large bowl add eggs, half & half, scallions, paprika, salt, pepper, Parmesan cheese, and hash mixture. Using a ladle, pour mixture to a nonstick muffin tin. Bake for 30 to 35 minutes.
