This is a very simple and quick way to prepare fish. It can usually be prepared while a side dish or starch cooks.
Mix sour cream, milk, and blue cheese mix. Set aside.
Season the flour with salt and pepper. Coat fish fillets with the seasoned flour.
Place fish in an oiled skillet over medium heat. Cook 1 minute on each side. Sprinkle thyme over fish and pour in the broth and wine. Reduce heat to simmer, and simmer 5-8 minutes, until fish is cooked through.
Remove fish to serving platter or plates. Stir the blue cheese blend into liquid left in pan, and pour over fish.
I usually start a seasoned rice and prepare this while it cooks. At the end, set the fish on the rice and pour sauce over all.
I have also tried it with bottled ranch dressing, when we had kids eating who don't like blue cheese. It was okay, but not the same. I am sure it would be good with some of the other creamy dressing/dip mixes, if you had a favorite.
