Thai Dragon Fruit Salad Recipe

  • 1 cup dragon fruit, diced
  • 1/2 cup lychee fruit; skinned, pitted, and sliced into smaller pieces.
  • 1 cup honeydew melon, diced
  • 1-2 tablespoons fresh key lime juice
  • 2 teaspoons honey or palm sugar
  • 1/2 teaspoon ground ginger
  • to taste Thai basil leaves
  • 1/8 cup dry roasted peanuts, crushed

Preparation Instructions

Whisk together ginger root, lime juice, and honey. (Or palm sugar if available.)

Toss diced fruit together with Thai basil leaves and dressing.

Serve in hollowed out dragonfruit or a shallow dish.

Garnish with crushed peanuts and serve immediately.
