This is a great way to make Thanksgiving leftovers more exiting, after eveyone is tired of sandwiches. Use whatever combination you'd like of turkey, potatoes, stuffing, cranberry, etc., or let people make their own combinations. Great for cooking with kids!
Prepare a batch of All-Purpose Flakey Pie Crust.
Preheat oven to 400.
Cut out 5-inch rounds or dough, gather the remaining dough, reroll, and cut more 5-inch rounds.
Brush the edges of each circle with beaten egg. On half of each circle, place 1/4 cup of assorted leftovers, leaving 1/2 inch of bare dough on the edge. Fold the bare half of the dough over the filling and use a fork to crimp the edges shut.
Arrange the pies on a baking sheet, cut a small vent slit (or a decorative pattern) on each one, and brush the tops with beaten egg. Bake at 400 for 20 minutes. Cool before serving.
