Zucchini Bread

I freeze two cups of shredded zucchini at the end of the season so my family can enjoy this bread all winter!

Beat the oil and sugar in your mixer thoroughly. Add one egg at a time as you continue to beat the mixture. Add the zucchini and vanilla. Mix the dry ingredients in a bowl. Beat in the dry ingredients at a lower speed. Stir in the raisins or cherries. Place in two loaf pans that have been sprayed with nonstick spray.
Bake at 325 degrees for 60-70 minutes.


I use canola oil and white whole wheat flour to make this healthy. Vegetable oil and white flour can also be used. Spices from the Spice House really have made this a family favorite!
