The allium family of plants includes onions, garlic, scallions, chives, and shallots. It's hard to imagine cooking without using at least some of these alliums frequently! From the chunks of onion that form the underlying flavor of a stock to the garnish of chives sprinkled on a finished dish, alliums impart a flavor that is irreplacable in many kitchens. Alliums store better than many vegetables, but they do rot in the pantry. Fresh garlic and onion can be uncomfortable to slice, and the smell can linger on your hands and cutting board.
