Vietnamese bark cinnamon has a flavor that is like the Chinese Tung Hing cassia cinnamon, but with an unbelievably high 5-7% oil content, it is much stronger and spicier. Once you taste it, it’s hard to go back to “ordinary” cinnamon! These bark pieces can be anywhere from 1 - 8 inches. Use them for extra flavor wherever a cinnamon stick is called for.
