This is my wife's favorite. It's quick and easy.
2-3 as a Main Dish
Melt the butter in a large skillet, and brown the chicken in it. When brown, remove chicken and add water. Then add the soup and poultry seasoning. Do not add veggies before this, because it's the devil to stir up. Now add veggies and bay leaves.
If you cut up vegetables and cover in water this goes together fast. I keep celery cut up and frozen in Zip Lock bags and just pop it in the water with vegetables and it thaws before I'm through browning the chicken.
After adding vegetables and giving a quick stir, reduce heat to simmer, cover and cook until potatoes are fork tender.
This sounds too simple to be good, but if you're tired at the end of the day, it's a quick meal.
Add as much butter as you like, I frankly use more than 2 tablespoons, as it makes it more creamy. You can adjust the water to get the consistency you want in the cheesy mixture.
